Living Gluten-Free

In 2015, I began to have multiple health issues come up that didn’t make sense to me. At the time I thought I was living an above average active and healthy lifestyle. I took care of my body, exercised regularly, got enough sleep, barely drank alcohol, and ate what I thought were the “right” foods.

Along with severe gut irritability, bad skin, constant exhaustion, and high anxiety, I developed an autoimmune condition called Uveitis, causing me blurred vision in my left eye. I am definitely one to procrastinate with taking care of things like this and thought that it was just normal and it too shall pass. Great logic, right?

After seeing multiple doctors, I was finally properly diagnosed with Non-Celiac Gluten Sensitivity, or Gluten Syndrome. Gluten Syndrome, is an autoimmune disease that attacks your autonomic nervous system. Your autonomic nervous system goes hand-in-hand with your gut and digestive function. Turns out I had a “leaky gut” and was determined to cure it through diet and lifestyle. I asked the doctor to give me the Dummy 101 explanation on what exactly having a "leaky gut" meant, and in a nutshell, every time I ate gluten, it was leaking into my bloodstream, causing toxins to spread throughout my body, causing severe discomfort in my gut because proteins were there that shouldn’t be, therefore causing me to feel sick, tired, inflamed, moody, anxious, and overall not myself.

The day I was told this news my life changed. I started reading books, articles, blogs, listening to podcasts, whatever I could get my hands on just to educate myself on what foods have gluten, what to avoid, what to consume, to make sure I do not feel this way ever again. I did not turn to medicine to try and cure my symptoms, which led me towards my passion in Holistic Nutrition. I did a complete revamp of my diet, avoided all foods that were harming my health. I can honestly say I have never felt better since eliminating these toxic foods. Now, I am far from perfect, and still like my fair share of treats that don’t make me feel my best, but we are all a work in progress and I am working on myself with each day that passes! It has been 5 years of going gluten-free and I can honestly say it has shifted my health for the better. This did not happen overnight for me, as nothing does in life. It was a very specific process of trial and error, education, being open-minded and mindful of not only what I was fueling my body with, but also my thoughts, decisions, and environment, which I will discuss at a later date.
